Units Scale
  • 1/2 pound chopped rhubarb
  • 1/2 pound chopped strawberries
  • 2 cups sugar
  • 2 cups apple cider vinegar


  • Wash and chop the rhubarb and strawberries into bite size pieces.
  • Next, in a medium size bowl combine equal parts strawberry rhubarb and sugar. Mix the fruit and sugar mixture well, gently crushing the fruit until a sugary liquid begins to be released from the fruit.
  • Cover the fruit/sugar bowl and place in the refrigerator for 1-3 days.
  • Give the fruit mixture a good mash and then strain the liquid into a clean glass container.
  • At this point at equal parts apple cider vinegar to the fruit syrup. You now have your strawberry rhubarb shrub! Cover and store in the refrigerator in an airtight container for up to six months.
