Description

This chive and goat cheese frittata is bursting with seasonal fresh ingredients that make it a great simple breakfast or brunch staple.


Ingredients

  • 6 pasture raised eggs (large)

  • 2 ounces goat cheese

  • 1/4 cup green garlic

  • 1 cup chopped arugula

  • 1/4 cup chopped chives

  • 1/4 cup chopped radishes

  • 1/2 tsp salt

  • 1/2 tsp pepper

Toppings

  • 1 chopped radish

  • 1/2 cup snow pea sprouts

  • Additional crumbled goat cheese

  • Chopped chives

  • Salt and pepper to taste


Instructions

  • Preheat oven to 350 degrees F

  • In a medium size mixing bowl place all of your ingredients expect for the cheese.

  • Mix well until all ingredients are combined.

  • Spray a large oven safe skillet or cast iron pan with coconut oil and add egg mixture into pan.

  • Top with crumbled goat cheese and place in oven for ~25-30 minutes or until egg is cooked throughly.

  • Remove from oven and top with additional ingredients to your taste preference.

  • Serve immediately or save for later (can be served warm or cold).
