Description
This chive and goat cheese frittata is bursting with seasonal fresh ingredients that make it a great simple breakfast or brunch staple.
Ingredients

6 pasture raised eggs (large)

2 ounces goat cheese
-
1/4 cup green garlic
-
1 cup chopped arugula
-
1/4 cup chopped chives
-
1/4 cup chopped radishes
-
1/2 tsp salt
-
1/2 tsp pepper
Toppings
-
1 chopped radish
-
1/2 cup snow pea sprouts
-
Additional crumbled goat cheese
-
Chopped chives
-
Salt and pepper to taste
Instructions

Preheat oven to 350 degrees F

In a medium size mixing bowl place all of your ingredients expect for the cheese.

Mix well until all ingredients are combined.

Spray a large oven safe skillet or cast iron pan with coconut oil and add egg mixture into pan.

Top with crumbled goat cheese and place in oven for ~25-30 minutes or until egg is cooked throughly.

Remove from oven and top with additional ingredients to your taste preference.

Serve immediately or save for later (can be served warm or cold).
